Accordion component doesn't handle multi-line text

This started as swapping out icons, but after relinking to the Truss components, we started focusing on the issue of the accordion component not being able to handle multi-line text.

We need it to:

• allow for horizontal resizing, while keeping the icon constrained to the right side
• allow for text-wrapping and vertical resizing when the text is longer than the available width of the component
