chore: re-enable compilation checks, update otel and protobuf #2254

This PR:

  • updates otel and protobuf
  • updates docs and setup scripts for protobuf generation
  • re-instates compilation checks

This PR also:

  • updates the server implementation to the latest otel protobufs, removing streaming
  • additional auth headers to handle user authentication, as well as legacy user auth handling
  • consolidates transform module into a Logflare.Logs.OtelTrace processor, for telemetry.

✅ verified on dev that all is working.
