I am suspecting that this may well be an isolated incident probably due to a possible bug on the bios of my GB-BRR5H-4500 GIGABYTE system
the method described above for loading EfiGuardDxe.efi as a device driver works fine on my other systems, an Intel N100 (UEFI3), a Ryzen5 1600AF (UEFI2, CSM disabled) etc.
FWIW, I was able to successfully load EfiGuardDxe.efi as a device driver with GrubFM. the display remains on the text loading the driver and does not load back the GrubFM menu
I memorized the keystrokes for the proper menu selection for the Win8.1 to be loaded & hitting the appropriate keystrokes, win8.1 booted just fine.
I don't know if this is specifically related to the GB-BRR5H-4500 model or it's a more general issue related to the AMD Ryzen 5 4500U architecture
Edit: memorizing the keystrokes (F4) for setting the resolution back to 1920x1080 under GrubFM, restores the menu from a blank screen

Steps to reproduce
I use a usb with a Ventoy & a GrubFM (iso) to easily navigate and load EfiGuardDxe.efi as device driver
