investigate supporting release channels for corresponding tags

Currently when I spin up a canary/maintenance docker image from OctoPrint it incorrectly tells me their is an "Upgrade" which is actually a downgrade back to the previous stable release. This is due to the update manager in OctoPrint not been set to the correct channel on installation.

Describe the solution you'd like
I would like the different tags to update the setting inside of the update manager to corrospond with the actual release it's based on. This will stop the incorrect update notification.

Describe alternatives you've considered
Currently on my own instances I do this manually, another work around could be firing and API call once the initial setup wizard is complete to set that that way.
