I would like to know something about MoorDyn's theoretical knowledge such as dynamic equations, etc., so that I can build an external controller for Cable control inside Simulink.

I would suggest reviewing the papers referenced in the online MoorDyn documentation for information on the theory basis of MoorDyn: https://moordyn.readthedocs.io/en/latest/theory.html#references.
