Update pair addresses for all Uniswap variations

The current list of pair addresses used in UniswapV2, Sushiswap, and Quickswap are outdated and include inactive or low-activity pairs.
To enhance the user experience and data accuracy, we need to curate and create a new list of top pairs for all three platforms.

We should either have a separate branch for each usecase (UniswapV2, SushiSwap, and Quickswap) or come up with a better way to manage our config files.
Only updating for UniswapV2 in main for now.

P.S. - Sushiswap analytics page https://app.sushi.com/analytics seems to be broken.
