the log file you posted shows the error 2002-6400

ResultFsPermissionDenied (2002-6400) here usually means Ryujinx has been denied access to the save folder for this game. Most of the time it’s solved if you delete the save folder: Right click the game > Open User Save Directory. Backup the contents if you care about the save. Go up 2 levels and delete the selected folder. Run the game again.

If this doesn’t fix it, check that Ryujinx isn’t on a protected folder (such as the desktop or the root of a drive) and that a third party antivirus (if you have one) isn’t blocking Ryujinx from using the save folder. If all else fails, make a portable install and bring over your caches and saves from the previous install.

So i was indeed able to fix it. I had to reinstall Ryujinx and delete the entire save directory under the "portable" folder, e.g. ./portable/bis/user/save or whatever the hierarchy is. So whats weird is that some games would work fine, others, newer ones that I just obtained would simply crash. After removing that, I was able to boot the games just fine, but all of my save data was gone, obviously.

I checked the drive permissions that the emulation stuff is on, and it had "Full Access" for all users, but I would have this issue. Not sure why this happened, but its fixed now. One thing that didnt work was copying the files back from the previous save directory. Something was corrupt or wrong with that particular save folder or something, so I will just restart everything.
