Add all relevant SODAR env vars

Currently, not all SODAR settings can be modifiedf in this Docker environment. As this is the primary way anyone running SODAR beyond development as well as deploying it, all relevant variables should be editable in the Docker Compose environment.

Vars related to e.g. web server settings within the image do not need to be included.
