Remove all number/BigInt value from metadata files when read from the subgraph

When some values are types as numbers or BigInt, in metadata files read by the subgraph, nothing prevent against setting invalid values that will provoque a failure in the subgraph handlers when trying to parse the values.
Using string typed field is more robust
