[data] catalog intermediate and final data products

We've talked about cataloging the various intermediate and final data products produced by the various scripts / notebooks in this repository. We have an intake catalog in carbonplan_forests/data and can use that for now.

The core datasets we've created to date are:

1. Biomass (historical and future predictions)
2. Fire risk (historical and future predictions)
3. Drought mortality (historical and future predictions)
4. Insect mortality (historical and future predictions)
5. Biophysical feedbacks

Intermediate datasets:

1. FIA wide (maybe this should go in carbonplan-data/processed?)
2. MTBS monthly rasters (maybe this should go in carbonplan-data/processed?)

I think I agree that the FIA and MTBS preprocessing probably belongs in carbonplan-data/processed, whereas carbonplan_forests/data should only catalog the core derived products we've produced as part of this analysis
