Podman-compose seems to handle environment variables badly...

I had some issues with podman-compose's --env-file argument... I looked around the issue tracker and found that there are lots of issues with environment variables, envfiles and interpolation.

I thought it might be useful to point it out

• Multiple env files as arguments or environment variable
• podman-compose run -e doesn't like values with equals signs
• envsubst not working "Syntax error: Unterminated quoted string"
• compose run - Environment parameters not set in container
• some .env values are ignored
• Passing of environment variables does not match behaviour of docker-compose
• No variable interpolation in label name
• Missing support for variable interpolation in .env files
