Adopt Lucide.dev Icons Library

Continuing the thought from #87 – I'm thinking if we should adopt https://lucide.dev/ for our icons system – it's tree-shakeable and has a ton of great options + we won't need to manually configure each icon 🤔

Only downside I can think of is configurability – like if we need to do something super specific/custom with an icon...but even so we can just create a custom icon the same way we're doing now.
