Multiple complaints (including first hand experience) of the website frequently forcing you to login.

Potential because when watchtower updates the container and all cookie state is lost

This could be solved by updating the memory store to something else https://github.com/expressjs/session#compatible-session-stores

I previously tried to do this so we were not using the memory store in production but encountered issues using it with payload.
