Scrolling the sidebar and no information on the main view as to which app it belongs to
Addressing them:
There is too much information and visual noise being provided in a single screen but there isn't enough explaining what permissions are and how they work.
Possible solution:
Use a simple settings page like Privacy and Security > History to show the different permission categories, with a breif explanation at the top of the main view as to what it is, and a list with an inline 'Select apps' popover button at the bottom

The only exception to this page layout could be the folder access category, but realistically users shouldn't be allowed to give access to any non-home folders anyway.
Possible solution:
macOS has seperate pages for individually granted folder access (I presume from when the user chooses a folder outside the app's scope via the filechooser dialogue, which is handled by macOS), full disk access (presumedly with exceptions like flatpak) and interestingly photos too.
I think a good method may be having a list of folders like Documents, Downloads, Pictures etc. that apps can be added to the allow list for.
Open for discussion, but I'm pretty sure this would be a good place to start for improving it
