Unify README.md style?

Maybe this has something to do with it, but I like the way other encode projects' READMEs are written(for example, starlette, httpx ...)
So, I did something a little unnecessary, but fun.
(Developers love that kind of thing... right? 🤣)

The logo might need a bit of adaptation in order to suit dark backgrounds?

Any idea where I can find the logo file for dark mode? If I find it, I think I can create a pull request :)
