Mettre à jour la version de ruby utilisée #487

Quand j'essaie d'installer le projet comme indiqué dans la documentation, j'ai l'erreur suivante (sur Ubuntu 20.04) :

bundle install
Fetching gem metadata from https://rubygems.org/
Fetching gem metadata from https://rubygems.org/.........
ruby_dep-1.5.0 requires ruby version >= 2.2.5, ~> 2.2, which is incompatible with the current version, ruby 3.0.1p64

La version 2.2.5 date d'avril 2016, soit plus de 5 ans, et n'est plus supportée (on a un avertissement quand on tente de l'installer)
