(gatsby-source-strapi) Creating a plugin for strapi to mock its APIs

Hello,

As I am annoyed by the well known limitation #1 of having to fill all my fields to generate a schema. I don't want to have to do that, nor modify the content of the database by filling it with random things. So I made a Strapi plugin to mock the APIs and to be sure to get all the data filled in.

I hope to have managed all the cases, but before publishing on the store, if you could take a look and give me feedback if you encounter difficulties or if you find bugs.
