This PR updates the NDC SDK to v0.4.0, and fixes all the related code to account for the breaking changes. It also updates the Rust version used to v1.81.0, updates the Docker image to the latest Debian version and uses some new features in the
connector-metadata.yamlfile. The readme is also cleaned up a bit.
