To anyone reading this in the future, it doesn't look like it is possible since the search text uses a TextInput component, and to edit the placeholder text color for any TextInput, you need to modify placeholderTextColor. Unfortunately, there is no prop within the npm package that allows you to pass in a color to modify placeholderTextColor. It would be greatly appreciated if the author could add this functionality :)
