I opened a channel to okx and I have over 200 transaction confirmations and the channel is still listed as pending. What is it about ?

Do you see your channel opening with lncli pendingchannels?

Yes, the channel is on the pendingchannels list

Did you try restarting lnd? Could you look into the logs after the restart and see anything that stand out?

I didn't notice anything else strange about it

Is it feasible to restart your node and look for all the log messages that the channel outpoint xyz:0 is involved in?
