Having text conversion mode would be neat, but uncertain if significantly more effort is needed to get LaTeX code to Typst code conversion.
As the OCR services I've come across tend to convert mathematical content to LaTeX code, having some sort of script for converting a string containing a mixture of LaTeX math and LaTeX text into Typst code would be practical and likely be widely sought after by people looking to digitize their math material into Typst.
At the risk of raising something that sounds tangential to this thread's OP comment, I think it'd be nice to have a script that converts #mitex(...) and #mi("...") excerpts in a Typst file to their Typst math equivalents.
EDIT: Just found out that the official Typst web editor has a function that provides best effort conversion of tex code files to typst code. Maybe this would be of help to you
