New command: erdpy config reset

Hi,

I found myself having overriden erdpy dependency configs in the past until I wanted to reset everything back to the default (latest). This proofed complicated and required research on how to do this. With this issue I propose to add a command e.g. erdpy config reset that resets all values back to the default and latest configurations.
