Add more graphs

Is it possible to have graphs of other things, like stars and forks? I'm happy to make a PR if this is something you would like

Thanks Chris. We are using the "total number of open repos" for a headline metric dashboard, but for this project any other charts / stats are more than welcome.

Also to note that df_combined_cumsum contains a snapshot of ALL of the fields in the output table at every period there is a change. So although currently there is only a chart for Open Repos it would be easy enough to add them for Stargazers, Forks, and Open Issues.

The only area that could take a bit more work is if we wanted to look at Top License and Top Language over time... Another nice graphic might be an overall Top Language across all of the organisations over time?
