Export Toolkit configuration for XML export

Hello,
we are successfully exporting data with export toolkit via process manager but we lack for some detailed information how we can e.g. configurate a specific XML structure to be exported. It currently allows the root, row and attributes elements.
Is there any documentation available? Especially if nesting is possible.
