Allow configuring CSI docker images for listener-operator

Similar to stackabletech/secret-operator#235 we would like to configure CSI docker images because we don't have direct access to k8s.gcr.io registry. The helm chart for listener-operator currently uses this registry hardcoded:

Thanks for the reminder, this definitely makes sense. I created an issue for it (stackabletech/listener-operator#60).
