Why is Portainer using Port 8000 as the default on the documentation, using only port 9000?

It's used by the edge agent. See the bottom of this page in the docs.

I see, it's an optional port, maybe something on the extension to disable this makes sense./

Same, I have local stuff already running on port 8000 that interferes. If at all possible I'd use dynamic ports instead of fixed ports.

and docker desktop have no functionality to disable the plugin. Have to uninstall for now.

Thanks for raising this. We have removed the use of port 8000 in our next release. Which will be 2.15

portainer/portainer#7195
