Holy moly, I just solved this❗️
The issue was:
I had the D1 Mini connected to the Mac via USB for, obviously, uploading the code.
I left it connected and had the PN532 powered through another, separate power supply, and not the VCC/GND pins on the D1 mini as they never worked for me.
I now cut an old usb cable and connected it to the same power supply that the PN532 is powered of.
And, voila, here we go.
I can't access the Serial monitor that way, but I checked for the MQTT messages, and the all come through now, when holding a tag in front of the reader.
Probbaly both devices need the exact same power supply, or at least a common ground.
