Remove PyInquirer dependency

We've had to do a number of workarounds, specifically with regard to users cancelling via ctrl+c during prompts. The project does not seem to be particularly active, and releases are seldom (most recent was in 2018) despite more recent merges. We should find an alternative package for providing this functionality.
