Requirements:

No roux (that "heating a flour and butter paste" thing) because roux is a one-way ticket to Lump City and the sauce ends up in the bin.
Gluten-free.
Properly thick, even when hot.
Tastes like the cheese was added to the sauce and not just waved near the pan.

This Doves Farm recipe is a good starting point, but it is watery and needs a lot more cheese, and I suspect the steps could be made even simpler.
