segbot_sensors: add topics into rviz config file for showing robot trajectory and traveled distance

This is mostly for saving scavenger hunt completion certificates.

As we discussed earlier today, assuming it's not high-bandwidth, we can add a certificate topic to the list of those automatically saved on every run.

That way we could collect statistics on the number and types of scavenger hunts. Maybe we should create a failure credential, too.
