Replaced solana-geyser-plugin-interface with agave-geyser-plugin-interface across multiple files including Cargo.toml, ensuring compatibility with newer versions. Additionally, updated various dependencies to their latest versions to maintain consistency.
This commit updates the Rust version used in both Dockerfiles from 1.73.0 to 1.81.0. It also changes the Solana installation URL to use version v2.0.13, ensuring the latest features and security updates are included.
