Several dependencies were updated to their latest stable versions in `go.mod` and `go.sum`. This includes updates for `nats-io/jwt`, `nats-io/nkeys`, `golang.org/x/crypto`, `golang.org/x/sys`, and `golang.org/x/text`. These changes improve compatibility and ensure the project uses the most recent updates from dependencies.
Removed the Go version matrix and replaced it with "stable" to always use the latest stable Go version. This simplifies the workflow and ensures it stays up-to-date automatically.
