Placeholder to add documentation for the email variables available in the most used templates in OJS.
This will be used by the OJS administrators to create email templates.
@jp-tosca I think this is the best location as it will be available for Rebecca and Dan and closed to the code.
I wasn't sure about the table format, please feel free to change.
