- Updates the runtime demo to work with newer versions of Caikit, which export protos under a different structure
- Updates docs to describe both legacy and more recent Caikit proto structures for object detection as an example
- Adds service generation name to runtime config
- Loosens the Caikit version pin back to what it was prior to yesterday, when we found the demo to be broken (here Pin caikit #52)
