Adds Verifiable Credential guide into updated docs, and includes updates to the guide to account for interfaces

It seems like when we have files called "index", docusaurus by default hides the sidebar. Can we try renaming the index file inside the composedb/examples/index to something else? For example, examples-index and updating the sidebar.js accordingly?
