Support multiple unique keys in snapshots

Resolves #9992

Problem

Users may want to snapshot tables with multiple unique keys.

Solution

Redefine the SnapshotConfig unique_key attribute as a Optional[Union[str, List[str]]]. Supporting code in dbt-adapters.
