chore: add components dir and config template + update defaults

Info

• Moves existing component to a new dir components
• Adds templates/config.yaml which will be used by Taskit to init and update the component in a customer's repo.
  We can set some defaults here, like a git source in a format that allows to download a specific commit or tag from a GitHub repository as a tarball.
• Updates some default repo values based on the stats of our repos + adds missing delete_branch_on_merge.
